Outdoor Food Tips for Summer from SGC

Summer is rapidly approaching and with it holidays, graduation, vacations and warmer temperatures. Illnesses caused by improper food handling increase in the summer months. Saint Germain Catering offers the following tips for staying healthy and safe with food during the warmer months:

When bringing food to a picnic or cookout:

–Frozen food can be used as a cold source in an insulated cooler along with ice and gel packs

–Fill coolers completely so the cooler will maintain its cold temperature longer

–Keep coolers out of direct sun

When cooking on the grill:

–Try color coded cutting boards and utensils for raw meat and other types of food such as fruit or bread

–Use a food thermometer to make sure meat and poultry are cooked thoroughly to their safe minimum internal temperatures try one of these innovative thermometers

–Keep perishable food cold until it is ready to cook

When serving food outdoors:

–Food should not sit out for more than two hours. In hot weather (above 90 °F), food should NEVER sit out for more than one hour.
–Serve cold food in small portions, and keep the rest in the cooler.
–Keep food hot by setting it to the side of the grill rack, not directly over the coals
