We spend all day cooking up a massive spread only to be faced with a fridge full of leftovers. Forget pawning off your extras on departing relatives and save your stash to use in these creative Thanksgiving leftover sandwich recipes.

The Two-Handed Turkeywich

Going to work the day after Thanksgiving can be a letdown. Who wants to go from homecooked eats to luck from a vending machine? Prolong the holiday spirit by piling sliced turkey, stuffing, cranberry sauce, and a slathering of mayo onto one of your leftover buns. It’s the perfect Thanksgiving dinner redux to take on the go or eat standing up while you start unpacking the Christmas decorations. Bonus points if you dip your ‘wich in some warmed gravy.


Deviled Egg Salad

Snacking on mustardy deviled eggs while the turkey finishes roasting is a time-honored Thanksgiving tradition in a lot of homes, but those savory nuggets aren’t quite so tasty the next day. Transform them into something a little more delicious:

  •  Chop the eggs and place them in a bowl
  •  Add chopped onion and celery from your crudité tray
  •  Layer lettuce or spinach leaves on sliced white bread
  •  Optional mix-ins: chopped pickles, sweet paprika, olive slices


Grilled Turkey and Brie

Brie works great for this sandwich because of its unctuous, melty quality, but you can use almost anything from your cheese tray, especially mozzarella, cheddar, or even cream cheese mixed with Parmesan (it won’t melt as nicely, but it’ll taste good!).

  •  Apply a thin coat of good quality butter or mayo to both sides of two pieces of bread
  •  Add cheese to one piece of bread, top with sliced turkey, add more cheese then top with the second slice of bread
  •  Toast each side of your sandwich in a hot pan over medium heat – remove when the bread is golden brown and the ingredients are gooey
  •  Mix together some leftover cranberry sauce and a teaspoon or two of whole grain mustard
  •  Dab your special sauce on the grilled cheese and devour


The Breakfast Burrito

The best part of breakfast burritos is that you can put pretty much anything inside them.

  •  Sauté shredded turkey and whatever veggies are handy – we like spinach, diced onion, shaved brussels sprouts, broccoli, tomatoes, and roasted red peppers.
  •  Add in some beaten eggs and scramble over medium-low heat.
  •  Just before the eggs are set, mix in a few crumbles of goat cheese or shredded cheddar
  •  Spoon the whole mess into a large tortilla or pita pocket and top with salsa (optional)


The Open-Faced Wonder

Sloppy yet scrumptious, this sandwich is as easy as it is messy. All you need is a slice of bread which you’re going to cover in layers of warmed-up mashed potatoes, turkey, and gravy. Eat with glee and, if you’re really kind, save one for Santa.
